Ingredients

  • Hard boiled eggs - 4, shelled
  • Cooked green peas - 1 cup
  • Grated coconut - 1.5 cup
  • Ginger - 1 cm piece
  • Garlic - 4 flakes
  • Chilli powder - 1 tsp
  • Coriander powder - 2 tsp
  • Cumin powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Tamarind - size of a small lime
  • Oil - 3 tbsp
  • Onion - 1/2 cup, finely chopped
  • Coriander leaves - a small bunch-to garnish
  • Salt to taste

How to Make Egg and Green Peas Curry

  • Grind the coconut, the ginger and garlic into a smooth paste
  • Mix this with all the powders
  • Soak the tamarind in 1/2 cup of water and extract the juice
  • Heat oil in a pan and saute the onions until pink
  • Add the coconut paste and fry it
  • Now add the tamarind juice and 1.5 cups of water
  • Bring to a boil and simmer for 5 minutes
  • Add the green peas and eggs
  • Add salt to taste
  • Simmer for 5 more mins
  • Garnish with coriander leaves
