Ingredients

  • 6 hard-boiled eggs
  • 4 onions, minced
  • 1/4 tsp - pepper
  • 2 tbsp - tomato puree
  • 3 tbsp - butter
  • 1 tbsp - chopped coriander leaves
  • 3 tbsp - breadcrumbs
  • Salt to taste

How to Make Egg and onion bake

  • Grease a baking dish.
  • Peel and slice the eggs and place lightly on the dish.
  • Melt the butter and saute the onions gently until golden brown.
  • Add the tomato puree, pepper and salt.
  • Simmer for 5 mins.
  • Remove from the fire and stir in the coriander leaves.
  • Pour the mixture over the eggs and sprinkle with breadcrumbs.
  • Bake in a hot oven at 233 degrees C for 20 mins.
  • Serve immediately.
  • Makes 4 servings.
