  • 5 - eggs
  • 3 - medium sized onions (finely chopped)
  • 4 - green chillies (finely chopped)
  • 3 - medium sized tomatoes (finely chopped)
  • 2 tsp - red chilli powder
  • 2 tsp - coriander powder
  • 1/2 tsp - turmeric powder
  • 5 tbsp - oil
  • Handful of coriander leaves (finely chopped)
  • Salt to taste

How to Make Egg Bhurji

  • Break the eggs in a bowl and keep aside.
  • Lightly heat oil in a kadai. Add onions and green chillies.
  • Saute on a low flame till onions turn pink.
  • Add tomatoes and cook for 5 mins on a medium flame.
  • Add the powdered masalas and salt.
  • Cook on a low flame till oil separates.
  • Add the eggs and stir continuously till eggs are cooked.
  • Add coriander leaves and simmer for 2 minutes.
  • Serve hot with rotis.
