Ingredients

  • 1 dozen - eggs, hard boiled
  • 4 tbsp - mayonnaise
  • 1 tsp - salt
  • 1/2 tsp - pepper
  • 1/2 tsp - curry powder
  • 1 tbsp - grated cheese
  • 1 tbsp - tomato paste
  • 1 tsp - Worcestershire sauce
  • 1 tbsp - crushed apple
  • 1 tsp - lemon juice
  • Some chopped lettuce
  • For Decoration:
  • Cucumber
  • Beetroot
  • Tomato

How to Make Egg Medley

  • Cut the eggs into halves carefully. Remove the yolks and mash them
  • Mix with the mayonnaise, seasoning and curry powder.
  • Divide the mixture into three batches.
  • Mix tomato paste into one batch, Worcestershire sauce and apple puree into the next and grated cheese and lemon juice into the third.
  • Refill the whites, place them in three lines on a bed of shredded lettuce and surround them with sliced tomato, cucumber and beetroot.
