Ingredients

  • egg 4, lightly beaten
  • button mushrooms - 1/2 cup, chopped
  • soya granules - 1/2 cup
  • onion - 1/2 cup, minced
  • green chili - 1 tsp, minced
  • garam masala - 1/2 tsp
  • tomato puree - 2 tbsp
  • oil - 1 tbsp
  • mint and coriander leaves - 1 tbsp each, chopped
  • salt to taste

How to Make Egg, Mushroom and Soya Scramble

  • Soak Soya granules in hot water for 15 minutes.
  • Drain and squeeze out the water.
  • Heat oil in a fry pan; fry onions till pale brown.
  • Add green chili and mushroom.
  • Cook till the liquid from mushrooms is evaporated.
  • Add garam masala, salt and tomato puree.
  • Add eggs and stir till eggs are lightly set.
  • Add mint and coriander leaves.
  • Mix and remove from fire.
  • Serve hot on toast.
