Ingredients

  • Dry ingredients:
  • 2 cups - all purpose flour
  • 3/4 cup - sugar
  • 1.5 tbsp - baking powder
  • 1/2 tsp - baking soda
  • Salt a pinch
  • 1/2 tsp - cinnamon powder
  • 2 tbsp - flax seed (optional)
  • Wet ingredients: 2 bananas
  • 3/4 cup - butter
  • 2 tbsp - vanilla pod
  • 1/2 cup - milk
  • 1 cup - yogurt
  • Garnish: banana rounds coated in chocolate sauce
  • Accompaniments: Chocolate sauce
  • Banana, ice cream

How to Make Eggless Banana Cake with Cinnamon

  • Pre-preparation:
  • Pre-heat the oven to 200 degrees centigrade
  • Grease a 9 inch baking tin. Place a baking sheet and keep aside.
  • Soak flax seed in water for 5 mins and grind into a paste
  • With a hand blender blend powdered sugar, butter and beat till creamy
  • Add the curd and blend till creamy and frothy. Add the vanilla extract and blend again
  • Add the baking soda and blend
  • Add banana and blend again till completely mashed
  • Sieve through the dry ingredients two to three times to remove any lumps
  • Gradually and gently fold in the liquid to the dry ingredients till a lump free batter is formed
  • Transfer the batter to the cake tin and bake at 200 degrees centigrade for approximately 35-40 mins
  • Insert a long needle or toothpick to check if the cake is done.
  • Once done, remove and let it cool.
  • Flip it over a plate and release the cake from the bake tin.
  • Spread the frosting and garnish with banana roundels accompanied with vanilla ice cream
