Ingredients

  • 1.5 cups - All-purpose flour
  • 1.5 cups - Sugar
  • 1/4 cup - Milk
  • 1/4 cup - Chocolate powder
  • 1/2 cup - Silken Tofu
  • 1/4 cup - Butter (room temperature)
  • 1 tsp - Vanilla extract
  • 1 tsp - Baking powder
  • 2 tbsp - Powdered Sugar
  • To Soak:
  • 10 - Almond pieces
  • 10 - Cashew pieces
  • 1/4 cup - Dry Apricot pieces
  • 2 tbsp - Dry Raisins
  • 1/2 cup - Honey
  • 1/4 cup - Warm water

How to Make Eggless Christmas Fruits and Nuts Savarin Cake

  • Soak everything from 'To Soak' the list overnight or for 6 hours.
  • Beat sugar, milk, butter and silken tofu in a large bowl until they turn soft and fluffy.
  • Add the all-purpose flour, baking powder, chocolate powder and vanilla extract again to the beaten tofu-sugar mixture.
  • Mix everything into a soft cake batter.
  • Now, add the already soaked nuts and fruits with the honey to the cake batter and turn them well so that they will get mixed.
  • Preheat the oven to 350 degree F. Grease the savarin pan and pour the cake batter.
  • Bake them in the middle rack for 25 minutes.
  • Keep aside and let them cool.
  • Sprinkle the powdered sugar over the cake.
  • Enjoy the cake with a scoop of ice cream or simply with cream.
