  • 2 cups - All-purpose flour
  • 1 cup - Cornmeal
  • 1 cup - Sugar
  • 3 tsp - Egg replacer powder + 4tbsp Warm water
  • 1 tsp - Baking powder
  • 1/2 tsp - Baking Soda
  • 1/2 cup - Orange Juice (fresh)
  • 1 tbsp - Orange rinds
  • 3 tbsp - Vegetable shortening
  • 1/4 cup - Cranberries

How to Make Eggless Cornmeal Orange N Cranberries Loaf

  • Preheat the oven to 350 degree F.
  • Beat both the vegetable shortening and sugar until soft and fluffy.
  • Gradually, add the egg replacer powder mixed with warm water, baking powder, baking soda, orange juice and orange rinds.
  • Finally, add the all-purpose flour, cranberries and cornmeal.
  • Beat everything well into a soft batter.
  • Pour the batter into a greased loaf pan.
  • Sprinkle a few cranberry pieces over the batter.
  • Arrange the loaf pan in the middle rack and bake for 30-35 minutes or until the toothpick comes out clean.
  • Cut the loaves and serve.
