  • 1 cup - sweetened condensed milk
  • 1/2 cup - butter, softened
  • 1/4 cup - yogurt
  • 3tbsp - lemon juice
  • 1 tbsp - lemon zest
  • 1.5 cups - all-purpose flour
  • 1 tsp - baking powder
  • 1/2 tsp - baking soda
  • 1/4 tsp - salt
  • For filling:
  • 1/2 cup - desiccated coconut
  • 1/4 cup - cream cheese
  • 3 tbsp - sugar

How to Make Eggless Lemon Coconut Bread

  • Preheat oven to 350F and line a baking parchment sheet over a baking loaf pan.
  • In a bowl beat together condensed milk, butter at medium speed, scraping bowl often, until creamy.
  • Meanwhile, sieve together the flour, baking powder and baking soda and keep it aside
  • Blend yoghurt, lemon juice and lemon zest and beat till done.
  • Stir in the sieved flour mixture and salt until well mixed.
  • Mix the dry and wet ingredients together.
  • For filling: Combine cream cheese and sugar and mix well.
  • Stir in the desiccated coconut.
  • Spoon half of batter into prepared pan and spread the filling mixture evenly over batter.
  • Pour remaining batter over filling and bake for 40-45 minutes.
