  • 2.5 cups - All-purpose flour
  • 1/4 cup - Butter
  • 1/2 cup - Sugar
  • 1/2 cup - Creamy peanut butter
  • 1 cup - Fresh orange juice
  • 1 tbsp - Orange zest
  • 1 tsp - Baking powder
  • 1/2 tsp - Baking soda
  • 1/2 cup - White chocolate chunks
  • 1/2 cup - Yogurt
  • 1/2 tsp - Vanilla extract
  • 1/4 tsp - Salt
  • For Icing:
  • 1/4 cup - White chocolate (chopped roughly)
  • 3 tbsp - Fresh cream
  • A few sugar pearls

How to Make Eggless Peanut Butter Cupcakes

  • Preheat the oven to 350 degrees F.
  • Line the cupcake pan with paper moulds.
  • Beat the butter, sugar and peanut butter together until they turn smooth.
  • Now add the yogurt and orange juice and beat for a few minutes.
  • Sieve the flours with salt, baking soda and baking powder and add gradually to the already prepared wet ingredients.
  • Mix well with a spatula (don't overmix) and gently fold the white chocolate chunks and orange zest into the batter.
  • Spoon the cupcake batter into the paper moulds and bake for 20-25 minutes or until a toothpick inserted comes out clean.
  • For Icing:
  • Take the chopped white chocolate and fresh cream in a microwave safe bowl and heat for 2-3 minutes. Whisk well to turn into a white ganache.
  • Once the cupcakes get cooled, spoon the white chocolate ganache on top of the cupcakes and sprinkle the sugar pearls generously.
