  • 2 cups - All-purpose flour
  • 1/2 cup - Sugar
  • 1/4 cup - Butter
  • 1/4 cup - Oil (sunflower or canola)
  • 1 cup - Buttermilk
  • 1/4 cup - Walnuts (ground into fine powder)
  • 1 tsp - Baking powder
  • 1/2 tsp - Baking soda
  • 1 tsp - Vanilla extract
  • 2 tbsp - Chopped walnuts

How to Make Eggless Walnut Muffins

  • Preheat the oven to 350 degrees F.
  • Sieve the flour with baking soda and baking powder.
  • Add the walnut powder, mix and keep aside.
  • Beat the sugar, butter and oil until the sugar gets well dissolved.
  • Add the buttermilk, and vanilla extract, and whisk everything well.
  • Gradually add the dry ingredients to the wet ingredients, mix it well with a spatula
  • The batter will be quite thick but don't over mix the batter, else your muffins will turn hard.
  • Drop a large scoop of batter into the silicon muffin tray and bake for 20-25 minutes.
  • Serve with a cup of tea.
