Ingredients

  • 1/4 kg - brinjal/eggplant
  • 1 - onion
  • 2 - tomato
  • 1/2 cup - groundnuts
  • 1 tbsp - cumin seeds
  • 1 tbsp - sesame seeds
  • 1 tbsp - red chilli powder
  • 2 tbsp - coriander powder
  • 1 tsp - turmeric powder
  • asafetida, a pinch
  • salt to taste
  • oil for frying

How to Make Eggplant masala

  • Cut brinjal into four pieces.
  • Soak it in water immediately after cutting.
  • Fry groundnuts, sesame seeds, cumin seeds and powder it.
  • Grind onions and tomatoes and make a paste.
  • Keep other ingredients ready.
  • Heat oil in a pan/kadai, splutter cumin seeds, add asafoetida, then add brinjals and fry till it becomes soft.
  • Now add the ground onion and tomato paste.
  • Add red chilli powder, coriander powder, and finally groundnut paste.
  • Add little salt. Mix them well.
