Ingredients

  • 1 - eggplant, cut into small cubes
  • 1 - onion, finely chopped
  • 1.5 cups - basmati rice
  • Mustard seeds - A few
  • Salt - to taste
  • For Masala:
  • 1 tsp - channa dal
  • 1 tsp - urad dal
  • 1 tsp - coriander powder
  • 2 - red chillies ( or according to taste)

How to Make Eggplant Rice

  • In oil, fry all the masalas and grind it into a fine powder.
  • Take oil in another vessel and add mustard seeds. Once they pop, add channa dal and urad dal and fry until golden brown.
  • Add the finely chopped onion until golden brown.
  • Add the eggplant and add salt to it and cover it until it is cooked.
  • Once the eggplant is cooked, add the finely ground masala to it and add rice and twice the amount of water and cook.
  • Once ready, garnish it with coriander leaves and serve with raitha.
