  • 6 - Hardboiled Eggs
  • 1 clove - Garlic, minced
  • 1 - small onion, sliced
  • 1 tbsp - Oil
  • 1/2 tsp - Salt
  • Pepper to taste
  • 1 tbsp - Curry powder
  • 1 cup - Coconut milk
  • 1 - small sweet pepper

How to Make Eggs in Coconut Milk

  • Peel the hard-boiled eggs and cut into quarters.
  • Fry onion and garlic in oil until golden.
  • Add the curry powder, salt and peppers.
  • Mix well and gradually add the coconut milk.
  • Add the chopped sweet pepper.
  • Cook until the mixture thickens.
  • Remove from heat and add the cooked eggs.
