  • 8 hard-boiled eggs
  • 125g - cooked shrimps
  • 1.5 cups - stock
  • 1 cup - milk
  • 3 tbsp - mayonnaise
  • 1/2 cup - chilli powder
  • 1/4 tsp - dry mustard powder
  • 2 tbsp - flour
  • 1/2 tsp - ground roasted cumin seeds
  • Salt to taste
  • 1/2 cup - shredded cheese
  • 4 tbsp - butter
  • 1 tbsp - chopped coriander leaves

How to Make Eggs in shrimp sauce

  • Melt the butter and blend in the flour. Cook for 1 min. then add the stock and the milk.
  • Add the shrimps, salt and coriander leaves.
  • Cook, stirring constantly, until thick. Add the cheese and cook till it has melted.
  • Cut the eggs in half lengthwise and remove the yolks. Mash the yolks and mix with the mayonnaise, chilli powder, mustard, cumin seeds and a dash of salt.
  • Refill the egg whites with this mixture and place on a shallow baking dish.
  • Pour shrimp sauce over the stuffed eggs.
  • Dot with a little butter and bake in a moderate oven (177 degrees C) for 20 minutes.
