Ingredients

  • ½ kg - ratoli carrots (sweet potatoes)
  • 4 to 5 tbsp - ghee
  • ¼ kg - sugar

How to Make Ekadashi Ratoli Gajjar

  • Wash and cut the sweet potatoes into small round pieces.
  • Heat ghee in a heavy bottomed vessel and add the sweet potatoes and sugar.
  • Cook on a low flame for 15-20 minutes, stirring continuously till the potatoes are tender and the water from the sugar has been absorbed.
  • Cover with a lid and simmer for 5 minutes.
  • Place the vessel on a preheated tava and simmer for another 5 minutes.
  • Serve with Rajgiri puris.
