  • 500 g - paneer (cottage cheese) cubes
  • Cornmeal (yellow maize flour)
  • 2-3 tbsp - oil
  • Salt to taste
  • 1/4 tsp - freshly ground black pepper
  • 1/4 cup - finely chopped spring onions
  • 1 - clove garlic, minced
  • 1/4 tsp - cumin powder
  • 1/4 tsp - coriander powder
  • a pinch of nutmeg powder
  • 1/4 cup -red vinegar
  • 1/4 cup -vegetable stock or water
  • 1 tsp - red chilli powder
  • 2 tbsp - blanched slivered almonds
  • 2 tbsp - green olives, washed, drained and sliced
  • A few sprigs of fresh coriander

How to Make Farmhouse paneer (cottage cheese)

  • Roll the paneer pieces in cornmeal. Make sure to coat them completely.
  • Fry the paneer pieces in hot oil, sprinkle salt and pepper on the pieces as they cook.
  • When the paneer pieces are well browned, add onion, garlic, cumin, coriander powder and nutmeg.
  • Add vinegar and stock/water.
  • Cover and simmer for 5-10 minutes.
  • Add chilli powder and simmer for a few more minutes.
  • Add the almonds and olives.
  • Season with salt and pepper.
  • Garnish with coriander leaves. Serve hot.
