  • 1 kg - pomfret or any other mild tasting fish
  • 2 tbsp - chilli sauce
  • Oil for deep frying
  • For the sauce:
  • 1.5 tbsp - soya sauce
  • 1/2 tbsp - garlic powder
  • 2 tsp - sugar
  • 1/2 tsp - ginger powder
  • 3 tbsp - sherry
  • 5 drops vinegar
  • 1/2 tsp - salt

How to Make Fish in hot sauce

  • To make the sauce, combine garlic and ginger powder, soya sauce, sherry, salt, sugar and vinegar. Mix well.
  • Scale and clean the fish keeping the head and tail on and slash sides diagonally at intervals.
  • Heat oil for deep frying until smoky and fry the fish in it for 10 mins or until it is almost done.
  • Drain and keep aside.
  • Heat 1 tbsp. of oil, separately, till smoky and add to it the chilli sauce and the mixed sauce.
  • Put in the fish and simmer for just one minute and serve hot.
