Ingredients

  • 2 or 3 - eggs
  • 3 - shitake mushrooms
  • 1- carrot
  • 1- green onion
  • Salt and pepper

How to Make Folded Eggs

  • Soak shitake mushrooms in a bowl for 15 mins. Drain and set aside.
  • Grate carrot.
  • Chop green onion.
  • In a bowl, mix the carrot, onion and mushrooms.
  • Beat in the eggs.
  • Add salt and pepper.
  • Pour on to a pan on medium heat. As it cooks, keep folding and pressing.
  • When you finish folding, it should look like a giant egg roll.
  • Put it horizontally on a cutting board, and cut about 1/2 inch thick pieces and serve.
