Ingredients

  • 200 g - all-purpose flour
  • 115 g - butter
  • 1/2 cup - powdered sugar
  • 1/2 cup - brown sugar
  • 1 tsp - baking powder
  • 1/2 tsp - baking soda
  • 2 tbsp - honey
  • 2 tbsp - lemon zest
  • 1 tsp - fresh lemon juice
  • 1 tbsp - ground ginger
  • 1/2 tsp - cardamom

How to Make Fresh Ginger Lemon honey Cookies

  • Preheat oven to 180 degrees centigrade.
  • Add the flour, baking powder, ginger, baking soda and mix until well combined.
  • Cream the butter together with the sugar and honey until light and fluffy.
  • Grate in the lemon zest and finely chop the ginger and add to the bowl along with the lemon juice and ground ginger.
  • Add the flour and beat together until everything incorporated.
  • Knead to a smooth dough.
  • Flatten, slightly and place on the baking tray.
  • Bake in the oven for 12-14 mins until they are golden brown in colour.
  • Cool and store in an airtight container.
