Ingredients

  • 225 gms-cooked chicken, crab or lobster meat
  • 225 gms-tomatoes, blanched and skinned
  • Oil for frying
  • 225 gms-spring onions
  • 2-3-mushrooms
  • 115 gms-bamboo shoots
  • Stock
  • 1 tbsp-cornflour
  • 1-egg
  • Tomato sauce to taste

How to Make Fu Yong with Chicken or Fish

  • Cut chicken or shellfish into small pieces
  • Thinly slice all vegetables in a little oil for a few minutes
  • Add chicken or fish. Season
  • Pour in just enough stock to cover
  • Add soya sauce and boil for 2-3 minutes
  • Add cornflour mixed with a little water and continue cooking until thickened
  • Beat egg. Season and prepare an omelette
  • Serve chicken and vegetables with omelette on top and a little tomato sauce poured over it
