Ingredients

  • 300 g - tender gherkins
  • 3 - green chillies, chopped
  • 2 - onions, chopped
  • 1 tbsp - chopped garlic
  • 1/4 tsp - mustard seeds
  • 1/2 tsp - turmeric powder
  • 8 - curry leaves
  • 1/2 cup - grated coconut (optional)
  • 1 tbsp - oil
  • Salt to taste

How to Make Gherkins (Ivy Gourd) Foogath

  • Cut the gherkins into thin strips.
  • Heat oil in a pan and add the mustard, garlic and curry leaves.
  • When the mustard starts spluttering, add the chopped onion and green chillies and fry till the onions turn slightly brown.
  • Add the gherkins, turmeric powder and salt and mix well.
  • Mix in the grated coconut.
  • Cover and cook for about 10 minutes till the gherkins are soft.
  • Serve with rice and curry.
