  • Cauliflower - 1 medium size
  • milk - 1 litre
  • Cardamom (elaichi) - 4
  • Ghee - 2-3 tbsp
  • Sugar
  • Bay leaves - 2 nos.

How to Make Ghobi Ka Kheer

  • Peel the top portion of the gobi and make sure the flower is separated (Peel out only about 1 cm. from the top). These tiny flowers will be used for the kheer. Heat ghee, add cardamom and bay leaves .
  • Fry peeled gobi till light golden brown.
  • Boil milk in a separate vessel till it turns thick and add fried gobi flowers along with ghee, cardamom and bay leaves in the milk.
  • Boil till kheer is thicker.
  • Add desired amount of sugar and boil again.
  • Cool and serve.
