Ingredients

  • 3 medium - zucchini, peeled sparingly
  • 1 - onion, thinly sliced into rings
  • 1 tbsp - ginger, chopped very finely
  • 1 tbsp - finely scraped coconut
  • 1 - green chilli, finely chopped
  • 1 tbsp - soya sauce
  • 1/4 tsp - sugar
  • 1 pinch - turmeric powder
  • Salt to taste
  • 1 tbsp - butter or oil

How to Make Gingered Zucchini Fritters

  • Slice zucchini into thin rounds. Sprinkle salt and a handful of water.
  • Heat oil, and saute ginger and chillies.
  • Add onions, zucchini slices, coconut, stir fry till done.
  • Add salt, soya sauce, turmeric, sugar, stir and cook for 2 minutes.
  • Serve hot .
