Brinjals - 1/2 kg
bread crumbs - 1/2 cup
grated cheese - 1/2 cup
chopped coriander leaves - 3 tbsp
roasted peanuts - 2 tbsp, chopped
chopped onion - 3/4 cup
garlic - 1 tbsp, chopped
peeled and chopped tomatoes - 1/2 cup
green chilies 2 to 3, chopped
oil - 1 tbsp
oil to deep fry
pepper to taste
salt to taste
How to Make Gratinated Brinjals
Cut brinjals in halves, lengthwise.
Make cuts on the flesh, sprinkle with salt and set aside, cut side down wards.
After ½ hr, rinse and pat dry.
Scoop out the pulp and deep fry the shells in hot oil.
Drain on kitchen paper.
Heat 2 Tbsp of oil in a kadai.
Add onion, garlic and chilies. Fry till fragrant.
Add scooped brinjal pulp and cook till it is soft.
Add tomatoes and cook for 2-3 minutes.
Add salt, pepper, coriander leaves and peanuts.
Mix well and remove from fire.
Stuff the fried shells with the filling and arrange them on a microwave safe plate.
Combine bread crumbs with cheese and sprinkle on top.
Microwave on full power till the cheese melts, about 1-2 minutes.
