  • 1 tbsp - fresh lemon juice
  • 2 tbsp - light cream cheese (with roasted garlic)
  • 2 tsp - chopped fresh mint leaves
  • 2 tbsp olive oil
  • 1 - cucumber peeled and diced
  • 1 - large ripe Tomato, coarsely chopped
  • 1/2 cup - chopped onion, 2 cups - shredded cabbage
  • 1/3 cup crumbled ricotta cheese
  • salt
  • 1/4 tsp - fresh ground pepper
  • 2 large size wraps (warmed)

How to Make Greek Wrap

  • In a large bowl combine lemon juice, parmesan cheese, mint and mix well.
  • Add olive oil, diced cucumber, onion, tomato, cabbage and ricotta cheese and mix well
  • Season with pepper and salt.
  • Spoon half of the salad mixture onto the lower third of the wrap. (Make sure the filling does not reach the edge of the wrap. )
  • Fold in both sides of the wrap and roll up the wrap.
  • Toast the wrap on a grill for 1 minute
  • Cut in half and serve immediately.
