Ingredients

  • 1 bunch - palak (spinach) or any greens
  • 1 - green chilli
  • 3 cups - yogurt (curd) or fresh, thick buttermilk
  • 1/2 tbsp - oil
  • 1/2 tsp - jeera (cumin seeds)
  • 1/2 tsp - (optional) red chilli powder
  • Salt to taste

How to Make Green Raita

  • Cut and boil the greens in water till they are cooked. Grind the greens in a mixie with the green chillies and a little water till they are totally liquefied.
  • If you are using curd, add the curd to the greens before grinding.
  • Pour out the liquid from the mixie into a vessel. If you are using buttermilk, add it now.
  • Add salt to taste.
  • In a small pan, heat oil. Add cumin seeds and wait for a few minutes till they get roasted.
  • Add red chilli powder to the oil, if you prefer.
  • Pour the contents of the pan into the raita.
