  • 2 Zucchini
  • 1 tbsp. olive oil
  • 2 cups button mushrooms
  • 8-10 slices of whole wheat or rye bread
  • 1 garlic clove
  • ¾ cup diced tomatoes
  • Pinch of black pepper

How to Make Grilled Zucchini Bruschetta

  • Heat a ridged grill pan until very hot.
  • Using a vegetable peeler, slice the zucchini into long, thin stripes.
  • Brush the hot grill pan with the oil, add the zucchini slices, in batches, and cook until charred with grill marks.
  • Remove from the pan and keep warm.
  • Meanwhile, toast the bread under a preheated hot broiler for 2-3 minutes on each side.
  • Then rub one side of each slice with the garlic clove.
  • Spread the toasts with a little diced tomato.
  • Divide the zucchini strips and mushrooms among them.
  • Season with black pepper and serve.
