  • 1.5 cups - Wheat flour
  • 1/2 cup - Tender green gram
  • 2 - Green chillies
  • 1/2 tsp - Cumin seeds
  • 1/4 tsp -Sesame seeds
  • 1/4 tsp - Garam masala (optional)
  • Salt to taste
  • 2 tbsp- Oil
  • 2 tbsp- Ghee

How to Make Harbara Khakhras

  • Sieve the flour and the salt together.
  • Grind the gram and chillies in a mixer until smooth.
  • Add this to the flour. Now add the seeds, garam masala and 2 tbsp oil.
  • Mix well and knead into a smooth dough.
  • Divide into 20 portions and make balls.
  • Cover with a moist cloth.
  • Now roll these out into wafer thin rounds.
  • Place on a hot griddle, cook on both sides till light spots appear.
  • Apply ghee after taking down. Repeat for the entire dough.
  • Now heat a griddle, and cook the round, press with a thick wad of cloth to make it crisp and golden. Cook both the sides.
  • Allow to cool completely before storing in an airtight container.
  • Serve with tea or coffee with pickles, chutney or sauce.
