  • Eggplant - 6
  • Onion - 2, chopped
  • Cheese - 4 tsp, grated
  • Minced meat - 250 g (chicken or pork)
  • Bead crumbs - 3 tsp
  • Salt to taste
  • Water as required
  • Cornstarch - 1 tsp
  • Butter - 1 tsp
  • Oil - 4 tbsp

How to Make Hasami Age (Japanese)

  • Remove the stem of the eggplant. Cut it lengthwise into half. Cut the half, lengthwise, but not all the way through. Soak in salt water.
  • Heat butter in a pan and saute onion.
  • Add meat, bread crumbs, salt and water.
  • In medium heat, cover the pan for one minute.
  • Put cheese and mix well. Keep aside for cooling.
  • Divide into six parts.
  • Wipe off water from the eggplant.
  • Sprinkle cornstarch on the cut surface.
  • Place a layer of meat mixture between the eggplant halves. Again, sprinkle cornstarch around the meat.
  • Heat oil for deep Frying.
  • On medium heat, fry eggplant until the meat is done.
  • Garnish with grated ginger and soy sauce/ ketchup and serve.
