Ingredients

  • 1 cucumber
  • 4 cups - chicken stock
  • 1 cup - cream
  • 250 g - potatoes
  • 1 large onion
  • 1 tbsp - butter
  • salt and pepper
  • 2 lemons

How to Make Iced Cucumber Soup

  • Fry the onion, minced, in 1 tbsp. butter until soft.
  • Add the potatoes, peeled and chopped, chicken stock, salt and pepper.
  • Cook until the potatoes are soft, then cool.
  • Sieve or liquidize the soup.
  • Add the cucumber, peeled and finely chopped and the juice of the lemons. Chill the soup.
  • To serve:
  • Whisk the soup.
  • Add 1 cup cream and mint leaves in each bowl, serve ice-cold.
