Ingredients

  • 1 lb - Shrimp
  • 1 - Diced large onion
  • 1 tbsp - Crushed ginger root
  • 6 - Crushed garlic cloves
  • 5 - Curry leaves
  • 2 - Green chillies, slit lengthwise
  • 1/2 lb butter
  • 1/2 lb margarine or butter
  • Hot ingredients (#3)
  • 2 tbsp crushed red pepper
  • 1 tbsp Black crushed pepper
  • 1 tbsp White crushed pepper
  • Sauces/Pastes (#4)
  • 2 tbsp Worcestershire sauce
  • 2 tsp hot mustard
  • 3 tbsp red Tabasco Sauce or Red devil hot sauce
  • 1 tsp Thai or Vietnamese fish sauce
  • Spices (#5)
  • 1 tsp crushed coriander seeds
  • 1/2tsp cumin seeds
  • 1 tsp yellow curry powder
  • 1/2 tsp black mustard seed
  • 4 leaves bay leaves
  • 2 whole red dried peppers
  • Herbs (#6)
  • 2 tsp dry oregano
  • 1/2 tsp dry dill
  • 1/2 tsp dry parsley
  • 1/2 tsp dry sage
  • 1/2 tsp rosemary
  • 1/2 tsp dry thyme
  • 1/2 tsp lemon peel
  • Cooking Fluids (#7)
  • 1 12 oz. can Clam Juice or fish stock or water
  • 4 oz. Beer
  • 2 tbsp cooking oil

How to Make Indian BBQ Shrimp

  • In a large Dutch oven, heat the cooking oil on medium heat. Fry the spices (#5) to release the flavour. Add half the margarine and let it melt.
  • Add the herbs (#6) and fry gently.
  • Add the whole shrimp.
  • Fry till the shrimp turns light red in colour.
  • Add the base (#2), and hot ingredients (#3) and the rest of butter and margarine. Stir fry for 10 minutes.
  • Mix all the sauces and pastes (#4) in a cup, and then add it to the shrimp.
  • Reduce heat from medium to low. Simmer for 15 minutes.
  • Preheat your oven to 375 F.
  • In a deep flat pan or a large casserole disk transfer the stuff from the Dutch oven.
  • Add the cooking fluids (#7) and cover it with aluminium wrap. Do not crimp the foil around the edges. Bake for at least 90 minutes.
