Ingredients

  • 1.5 cups - water
  • 1/3 cup - toasted cashew
  • 1/4 cup - lemon juice
  • 2 tsp - ghee
  • 1 tsp - mustard
  • 1 tsp - red chilli powder
  • 1/4 tsp - asafoetida
  • 3 - tomatoes
  • 10 ounces - pasta
  • 8 ounces - green beans
  • Salt and pepper to taste
  • 1/2 cup - chopped coriander

How to Make Indian Pasta Salad

  • Blend water, half the quantity of nuts and lemon juice until smooth.
  • Heat ghee, add mustard seeds.
  • When they splutter, add asafoetida.
  • Then add tomatoes, chilli powder and cashew puree and remove from heat.
  • Boil a large pot of salted water add the green beans.
  • When the beans become tender, stir in the pasta.
  • Cook the pasta until tender and firm.
  • Drain well and add the pasta to the ingredients in the saucepan.
  • Season with salt and pepper.
  • Garnish with coriander and the remaining cashews.
