Ingredients

  • chicken mince - 250 gm
  • rice vermicelli - 150 gm
  • coconut milk - 400 ml
  • peanut oil - 3 tbsp
  • garlic - 1 tsp, minced
  • shallots - ½ cup, minced
  • curry leaves - few
  • lemon rind - 1 tsp, grated
  • light soya sauce - 2 tbsp
  • lemon juice - 1.5 tbsp
  • coriander leaves - 2 tbsp, chopped
  • spring onion - 2 tbsp, chopped
  • bean sprouts - 2 tbsp
  • cucumber cut into juliennes - 4 tbsp

How to Make Indonesian Chicken Soup

  • Heat oil and fry garlic till dark brown.
  • Add shallots and fry till golden brown.
  • Add curry leaves, lemon rind and coconut milk.
  • Add chicken mince and simmer till chicken is cooked.
  • Add vermicelli and simmer till it is cooked.
  • Add Soya sauce, lime juice, coriander and spring onions.
  • Mix well and remove from fire.
  • Serve hot garnished with bean sprouts and cucumber strips
