  • 250 gms. Raisins
  • 250 gms. Sultanas
  • 250 gms. Brown sugar
  • 150 ml. strong black tea
  • 250 gms. Plain flour
  • 1 tsp. baking powder
  • 1 tsp. mixed spice

How to Make Irish Tea Brack

  • Put the fruit and sugar in a bowl and pour the tea over.
  • Cover with cling wrap and leave overnight.
  • Sift flour and baking powder and spices together.
  • Mix in the eggs and flour, alternately and stir well.
  • Pour mixture into a prepared medium sized loaf tin and bake in preheated oven at 160 degrees C for 1 ½ hours.
