Salads become extra awesome when your favourite ingredients are added. A universally loved vegetable, cauliflower, is part of this salad and hence the name 'Italian Cauliflower Salad'. Cook the cauliflower in boiling water for few minutes, without disturbing its crispiness and crunchiness.

  • 1 medium sized cauliflower
  • 10 ripe olives, stoned and sliced
  • 1 tbsp. minced shallot or onions
  • ½ tsp. freshly ground black pepper
  • 3 tbsp. olive oil or salad oil
  • 1 tbsp. vinegar

How to Make Italian Cauliflower Salad

  • Wash and trim the cauliflower and break into small florets. Cook in a little boiling water for about 10 minutes or until tender but still crisp.
  • Drain thoroughly, cool and chill. Place the chilled cauliflower, olives and shallots in a bowl.
  • Shake the oil and vinegar together in a screw top jar. Toss the salad very gently in the dressing and serve in a salad bowl.
