  • 5 pieces - ripe jackfruit (arils), deseeded
  • 4 - eggs
  • 2.5 cups - flour
  • 1.75 cups - sugar
  • 220 g - butter
  • 1.5 tsp - baking powder
  • 1 tsp - lime juice
  • 1 pinch - salt

How to Make Jackfruit Cake

  • Sieve flour and baking powder together.
  • Separate egg yolks and white, beat the egg whites till stiff.
  • In a mixing bowl, mix together butter and sugar.
  • Add egg yolks, salt and lime juice.
  • To the above mixture add alternately flour and egg whites and mix using an electric hand mixer.
  • Chop jackfruit into fine pieces and add to the above batter. Mix well.
  • Meanwhile, preheat oven to 180 degrees.
  • Pour the batter into a large greased pan and bake for 50 mins.
