  • 450 ml. water
  • 2 tbsp. jasmine tea
  • 400 gms. well flavoured ripe pears
  • 4 tbsp lemon juice
  • 75 gms. sugar

How to Make Jasmine and Pear Sorbet

  • Pour the boiling water over the tea leaves and leave to infuse for 20 minutes.
  • Strain the tea – should be strong.
  • Peel, core and chop the pears and put them in small pan with the lemon juice.
  • Turn them around in the juice to prevent them from discolouring.
  • Add the sugar and the tea and bring to the boil.
  • Stir until the sugar dissolves – simmer for 10 minutes.
  • Pour the mixture into an ice cream machine and freeze accordingly.
