  • 2 medium onions
  • 2.5 to 3 tbsp - besan (gram flour)
  • ½ tsp - mustard seeds
  • ½ tsp - turmeric powder
  • ½ tsp - chilli powder
  • a pinch asafetida
  • 2 tbsp - chopped coriander (optional)
  • 3 tbsp - oil
  • salt to taste

How to Make Jhunka (Onion and Gram Flour)

  • Slice the onions thickly. Heat the oil in a heavy bottomed pan.
  • When it is smoking, add the mustard seeds.
  • When they have spluttered, add the asafetida, turmeric and chilli powder in quick succession.
  • Now put in the onions. Stir-fry for a few minutes.
  • Lower the heat, cover and cook the onions until soft but not mushy.
  • Do not let them brown too much. Now add salt.
  • Uncover, and sprinkle the besan over the onions, a tablespoon at a time, stirring between each addition.
  • When all the besan has been incorporated, sprinkle a little water over the mixture.
  • Stir, cover and cook for about 6-7 minutes.
  • Garnish with coriander if you like and serve hot.
