Ingredients

  • 250 gms. cashewnuts (kaju)
  • 250 gms. (1 cup) sugar
  • 1 cup milk
  • Vark (silver leaves) for decoration (optional)

How to Make Kaju Ki Barfi

  • Blend together the cashews and milk very finely, in a blender. Put the paste in a kadhai, add sugar and cook over a low flame, stirring till the sugar dissolves and then bring to a boil.
  • Continue stirring over medium flame, till mixture collects together and becomes dough-like.
  • Remove from flame and when cool enough to handle, roll on to a greased surface, with a greased rolling pin to ¼ cm thickness.
  • Cover with the vark and when cooled, cut into diamond shapes pieces and transfer onto a serving dish.
