Ingredients

  • Bitter gourd - 1/2 kg
  • Oil
  • Garlic - 8 flakes, sliced
  • Onion - 1 cup, thinly sliced
  • Coconut - 1/2 cup, grated
  • Green chillies (sliced) - 2 to 3
  • Peanuts - 2 tbsp
  • Curry leaves - few
  • Chilli powder - 1.5 tsp or to taste
  • Coriander powder - 1 tsp
  • Salt to taste

How to Make Kakarkai Vepudu (Bitter Gourd Fry)

  • Cut bitter gourd into thin round slices.
  • Sprinkle some salt and keep aside for 15 mins.
  • Drain the liquid and deep fry in hot oil till the slices are brown and crisp.
  • Heat 3 tbsp of oil in a fry pan.
  • Add garlic and fry till brown.
  • Add onion, fry till brown.
  • Add coconut, green chillies and peanuts.
  • Fry till coconut and peanuts are golden.
  • Add curry leaves, chilli and coriander powders.
  • Fry for a few seconds.
  • Add the bitter gourd slices, salt and mix well.
  • Serve with rice.
