  • Eggs, medium to large - 4
  • Onions, large - 2
  • Tomatoes, large - 3
  • White vinegar - 3 tbsp
  • Cloves
  • Cinnamon - 2 sticks
  • Jeera - 1 tsp
  • Turmeric -1/2 tsp
  • Jeera powder - 1 tsp
  • chilli powder - 1 tsp
  • Salt to taste
  • Oil - 3 tbsp
  • Coriander for garnishing

How to Make Kandaa nu Inda

  • Heat oil in a pan and add jeera, cloves, and cinnamon.
  • After it starts spluttering, add the sliced onions and fry till the onions start to caramelize.
  • At this point, add the sliced tomatoes and stir well till the tomatoes appear soft.
  • Add the masalas - turmeric, jeera powder, chilli powder, salt and vinegar and stir well.
  • Spread this mixture till it covers the base of the pan.
  • Break and add each of the eggs so that the eggs have separate places in the pan to cook.
  • Add the freshly chopped coriander and cover the pan with a lid.
  • Reduce to medium heat and let it cook for about 10-15 mins.
  • The eggs are ready when the egg whites have covered the yolks and you find that the yolks have hardened beneath the covering.
  • Serve each egg with some gravy and enjoy with bread or hot rotis.
