Kashmiri Lauz is a royal Kashmiri dish made with tender, tasty mutton. Kashmiri cuisine is known to be a creative fusion of Mughlai and Nawabi cooking style. This highly tempting dish is one of the best mutton recipes, recognised for its mouth-watering taste and irresistible aroma. 

Soft, juicy mutton is marinated in curd and a mixture of flavoured spices and masalas - chilli powder, peppercorn, cardamom, green chillies, garlic, ginger, cumin seeds and turmeric. This marinated meat is cooked along with ghee and onions. Top the mixture with cashews, raisins and egg yolks. 

Bake the whole mixture gently and you can serve garnished with tomato slices, salad leaves and coriander leaves. Kashmiri Lauz is a spicy and tasty dish that can be tried easily at home.

Ingredients

  • 500 gms. Boneless mutton
  • 2 cups curd
  • 2 medium onions, sliced
  • For the filling:
  • 2 eggs, boiled
  • 2 raw eggs
  • 10 gms. Cashews
  • 10 gms. Raisins
  • Grind to a paste:
  • 2 tsp. chilli powder
  • ½ tsp. peppercorn
  • 2 cardamoms
  • 4-5 green chillies
  • 6 flakes garlic
  • 1” piece ginger
  • ¼ tsp. cumin seeds
  • 2 tsp. pistachio nuts or chirongi
  • 1 tbsp. poppy seeds (khus khus)
  • Pinch of turmeric
  • Salt to taste
  • For garnishing:
  • Few tomato slices
  • Few salad leaves
  • A handful of coriander leaves

How to Make Kashmiri Lauz

  • Marinate meat in ground masala and ½ cup curd for at least ½ hour. Fry onions in 2 tbsp. ghee.
  • Add marinated meat and cook till tender and dry. Put in food processor with balance curd.
  • Add 2 egg whites and then divide mixture into two greased 30cm x 20cm trays. Spread a thin layer of the mixture, top with cashews and raisins.
  • Cover with balance mixture. Beat egg yolks and pour on top.
  • Bake in moderate oven till golden. Serve garnished with tomato slices, salad leaves and coriander leaves.
