Ingredients

  • 2 - carrots
  • 1 - potato
  • 1/4th - white squash
  • 1/4th - pumpkin
  • 1 - raw banana
  • 1/4th - cut yam
  • 1 cup - grated coconut
  • 1 tsp - jeera
  • 3 to 4 - chillies
  • 4 tsp - coconut oil
  • 1 tsp - turmeric powder
  • Beans, cut long
  • Peas
  • Curd
  • Curry leaves
  • Salt to taste

How to Make Kerala Avial

  • Cut all the vegetables.
  • Cook it well with salt and turmeric powder in it.
  • Grind the coconut, jeera and chillies.
  • Add the ground mixture to the cooked vegetables.
  • When everything is cooked then cool it down.
  • Beat the curd and mix it.
  • Add the coconut oil.
  • Garnish the avial with curry leaves.
  • Serve it along with rice.
