Ingredients

  • 1 red chilli, seeded and chopped
  • 1 tsp. canola oil
  • 1 tsp. ground coriander
  • ½ tsp. ground cumin
  • ½ tsp. turmeric
  • 4 garlic cloves
  • 1 inch piece of fresh root ginger, peeled and chopped
  • 1 tbsp. coconut oil
  • ¼ tsp. fenugreek seeds
  • 2 onions, finely sliced
  • ½ cup coconut milk
  • 1 & ¾ cup water
  • 1kg. fresh any white fish, cubed
  • Salt and black pepper to taste

How to Make Keralan Fish Curry

  • Place the chilli, canola oil, ground coriander, cumin, turmeric, garlic and ginger in a mini food processor or small blender and blend to form a paste.
  • Heat the coconut oil in a wok or large skillet, add the paste and fenugreek seeds, and cook for 2-3 minutes.
  • Add the onions, coconut milk, and measured water, season, and bring to a boil then cook for about 5 minutes, until reduced.
  • Add the fish cubes and simmer gently for 5-8 minutes or until cooked through.
