Ingredients

  • Cucumbers - 2 medium size
  • Peanuts - 100gm (roasted, peeled and ground)
  • Green Chillies - 1-2
  • Cumin seeds - 1 Tsp
  • coriander leaves - as required
  • Fresh grated coconut - 3-4 Tbsp (or as required)
  • Ghee - 1 tbsp
  • Salt to taste

How to Make Khamang kakdi (Cucumber)

  • Peel and grate the cucumbers (if the cucumbers have large seeds, scrape off the seeds before grating).
  • Sqeeze the grated cucumber to remove water.
  • Discard the water.
  • Add the ground peanut and salt to the cucumber and mix well.
  • Heat ghee in a small pan.
  • Add cumin seeds and allow to splutter.
  • Then add chillies. Pour it over the cucumber and mix.
  • While serving garnish it with coriander leaves and fresh grated coconut.
