Ingredients

  • 40 large shrimps
  • 4 small tomatoes
  • 4 tbsp. minced garlic
  • 1 tsp. sugar
  • 4 eggs
  • 8 spring onions – white bulb part only
  • 1600 gms. steamed rice
  • 4 small onions
  • 3 tbsp. oil
  • 2 tsp. tomato ketchup
  • 2 tbsp. fish sauce
  • 12 thin cucumber slices
  • 8 quarters lemon

How to Make Khao Pad Goong (Thai Shrimp Fried Rice)

  • Cut tomato and onion into 6 equal pieces.
  • Heat the oil in a wok or deep large frying pan over a high heat and add the minced garlic.
  • Fry until light brown.
  • Add shrimp, tomato, onion, ketchup, oil, fish sauce and sugar and cook for 30 seconds, stirring.
  • Whisk eggs and make into an omelette. Cool slightly and slice into strips.
  • Add the steamed rice, stir and turn for 1 minute.
  • Add the egg strips and stir for a further ½ minute.
  • Turn out onto a serving dish and arrange the cucumber, chopped spring onion and lemon over the fried rice.
  • Note:
  • This is a basic recipe for Thai Fried Rice. Chicken, beef etc. may be substituted for the shrimp to make other types of fried rice.
