  • 3/4 kg. lady's fingers
  • 3 tbsp - mango powder (amchur)
  • 3 tbsp - cumin seed powder
  • 1 tsp - chilli powder
  • 1/2 tsp - turmeric powder
  • 3 tbsp - fresh coconut, grated
  • 1/2 cup coriander leaves, chopped
  • 1 tsp - caramelized sugar
  • 4 tbsp - oil
  • Salt to taste

How to Make Khatti bharwan bhindi

  • Wipe the lady's fingers clean.
  • Remove stems and tips and slit lengthwise.
  • Mix all powdered spices, sugar, coconut, coriander leaves and salt.
  • Stuff the lady's fingers with this mixture.
  • Heat oil in a non-stick pan and arrange the stuffed lady's fingers in it.
  • Do not cover.
  • Cook on a low flame, turning occasionally without burning or breaking the vegetable.
  • Serve with parathas.
