Ingredients

  • 500 gms - mutton (leg pieces)
  • 1 - onion, chopped
  • 1 tsp - ginger paste
  • 2 tsp - garlic paste
  • Grind to powder:
  • 4 - cloves
  • 4 - green cardamom
  • 1-inch stick - cinnamon
  • 10/12 - black pepper
  • 1 - bay leaf
  • 1 tsp - red chilli powder
  • 1 tsp - cumin seed powder
  • 2 tsp - coriander powder
  • 1 tsp - turmeric powder
  • 3/4 cup - curd
  • 4 - tomatoes, cut into pieces
  • 4 tbsp - oil/ghee
  • salt to taste

How to Make Kosha mangsho

  • Marinate mutton pieces with salt, turmeric powder and curd for an hour, keep covered.
  • Heat oil/ghee in a wok, add bay leaf, onion and the ground masala and cook for about 10 minutes.
  • Add marinated mutton pieces, a little turmeric powder, ginger and garlic paste, powdered spices, tomatoes and salt to taste and cook for 15/20 minutes.
  • Cover and simmer till meat is done and the gravy is reduced.
  • Serve hot with rice or parathas.
