Ingredients

  • 1/2 kg-lauki (green gourd / doodhi) - peel and cut into 1 inch cubes
  • 2- tomatoes - medium sized - chopped fine
  • 3 tsp-oil
  • 1 tsp- cumin seeds (jeera)
  • 3 leaves-bay leaves (tez patta)
  • 1 pinch-asafoetida (hing)
  • salt
  • 1/4 tsp- turmeric powder (haldi)
  • 1.5 tsp -coriander powder (dhaniya powder)
  • 1/2 tsp -cumin powder (jeera powder)
  • 1/2 tsp - red chilli powder (mirchi powder)
  • green coriander leaves (dhaniya patti) chopped fine for garnishing

How to Make Lauki-Tamatar Subzi

  • In a pressure cooker, heat oil and add asafetida
  • Add jeera and bay leaf.
  • Add chopped tomatoes.
  • Fry the tomatoes - till they are soft/wilted.
  • Add the lauki pieces.
  • Add salt and other masala powders.
  • Mix well and cover the cooker.
  • Take off the fire after 3 whistles
  • Garnish with fresh coriander.
  • Serve with rotis/parathas.
